Uniform batonnets of sweet potato, parsnip, apple and pear highlight contrast in texture and flavor. The roots are dense and earthy, the fruit tartx and fragrant. Stacked together, they form a clean, structured bite.
Ingredients
1 sweet potato, peeled
2 parsnips, peeled
2 Ginger Gold or Golden Delicious apples, peeled
2 Bosc pears, peeled
1/2 lemon
8 blackberries
Method
- Cut fruit and veggies into 3-inch batonnets. Squeeze everything with lemon juice to avoid browning.
- Halve blackberries if they are small or quarter them if they are large.
- Pair with a bright dressing and something charred.
