minsThese smoky, cheesy chickpeas add crunch and hint of heat to salads, pastas or roasted dishes. Try them scattered over charred snap peas and radicchio with whipped ricotta and pesto, as shown here, or simply snack on them straight off the tray.
Ingredients
1 can (14 oz) chickpeas, drained + patted dry
1/4 cup extra virgin olive oil
2 tsps chipotle chili powder
2 tsps smoked paprika
kosher salt and black pepper
1/2 cup parmesan cheese, finely grated
Method
- Preheat oven to 425F / 220C.
- On a baking sheet, toss the chickpeas, 2 tablespoons olive oil, chili powder, paprika and a sprinkle of salt and couple grinds of pepper. Toss well to evenly coat.
- Bake for 15 minutes. Add 1/2 cup parmesan, toss and bake 5-10 more minutes until extra crisp.
