minsTamarind onions build layers of flavor fast. The ghee softens their bite while tamarind cuts through with sweet-sour intensity. They bring contrast to anything rich, folded into lentils, spooned over mashed potatoes or tucked inside stuffed breads.
Ingredients
45 g ghee
1 large red onion, thinly sliced into half-moons
1 tsp kosher salt
1 tsp black pepper
1 tsp kashmiri chili powder
1-2 tbsp tamarind concentrate, to taste
Method
- Heat ghee in a large skillet over medium-high until shimmering.
- Add onion, salt, black pepper and chili powder. Cook, stirring often, until onion is translucent, about 15 minutes. Turn off heat.
- Stir in tamarind concentrate until evenly coated and glossy.
