minutesSlow-roasting beets in a salt crust concentrates their sweetness and makes peeling effortless. Slice and layer them into salads, use as a colorful base or pair with something bright to highlight their depth.
Ingredients
4 med beets, mix of golden and red
1 lb coarse ground kosher salt
Method
- Preheat oven to 350°F (175°C).
- Add a ¼-inch layer of kosher salt to the bottom of a small baking dish. Nestle in the beets, making sure they don’t touch. Cover completely with remaining salt.
- Bake until fork-tender, about 1 hour 15 minutes.
- Let beets cool slightly and remove from salt. Salt can be reused for other roasting or to clean your cast iron skillets.
- Using gloves, peel and slice thinly, preferably with a mandoline.
