Adds a smoky, slightly bitter element to soft or creamy components. Serve warm or room temperature. Works well with herby sauces, fresh cheeses or creamy purées. Try it layered with ricotta, sweet dressings and grain salads.

Ingredients

  • 1 head radicchio

  • olive oil drizzle

  • kosher salt

  • black pepper, freshly ground

Method

  • Cut the radicchio into quarters, leaving the core intact.
  • Drizzle with olive oil and sprinkle with salt and pepper.
  • Either grill over high heat or char in cast iron pan, turning as needed. Let radicchio to get really charred, as this allows the sweetness to come through.
