Ingredients
1 head radicchio
olive oil drizzle
kosher salt
black pepper, freshly ground
Method
- Cut the radicchio into quarters, leaving the core intact.
- Drizzle with olive oil and sprinkle with salt and pepper.
- Either grill over high heat or char in cast iron pan, turning as needed. Let radicchio to get really charred, as this allows the sweetness to come through.
