hoursThis vinaigrette is crisp, sharp and full of green energy. Cucumber and chives give it a clean vegetal snap, while mustard and yogurt add punch and body. It brings grilled meats and hearty vegetables back to life. Just blend, chill and pour.
Ingredients
1/2 English cucumber, peeled, seeded and chopped
1/4 cup extra-virgin olive oil
2 tbsp red-wine vinegar
2 tbsp fresh chives, chopped
2 tbsp fresh parsley, chopped
1 tbsp plain greek yogurt
1 tsp Dijon mustard
1 tsp sugar
1/2 tsp salt
Method
- Add everything to a blender and blend until smooth.
- Add to jar, cover with lid and chill for 2 hours. Shake well before serving.
