ROASTED GARLIC TOMATO GRAVY

minsSlow-roasted garlic and caramelized tomato paste create a deep, layered gravy that’s full of umami. It adds richness and balance to meats, potatoes or roasted vegetables and ties together bold flavors with a warm, rounded finish.
Ingredients
2 medium heads garlic
1 tbsp olive oil
salt and pepper
3 tbsp unsalted butter
3 tbsp flour
2 tbsp tomato paste
2 cups stock, chicken or veggie
1-2 tsp Worcestershire sauce, to taste
salt and pepper, to taste
Method
- Preheat oven to 375°F (190°C). Slice the tops off garlic heads, drizzle with olive oil, season with salt and pepper, wrap in foil and roast for 45 minutes. When cool to the touch, squeeze cloves into a bowl and mash until smooth.
- Melt butter in a pot over medium heat. Whisk in flour and completely incorporate while whisking for 3 minutes.
- Add tomato paste and cook until slightly darkened and caramelized, another 2 minutes.
- Stir in roasted garlic paste and whisk until combined. Slowly pour in stock, whisking until smooth.
- Reduce heat to medium-low, continue whisking until gravy coats the back of the spoon, about 5-7 minutes. Remove from heat.
- Add Worcestershire sauce, salt and pepper to taste.
- For an extra smooth sauce, run through a fine mesh strainer before serving.
